As promised to so many people, here's the recipe I have been raving about!

PINEAPPLE PEEL TEA - Anti-inflammatory Tea

Ingredients:

17 cups water

1 large pineapple, the peel and core

2 oranges

1 lemon

2 Tbsp fresh grated turmeric

3 Tbsp fresh grated ginger

1/2 tsp cayenne pepper

2 springs rosemary

2 cinnamon sticks

3 Tbsp honey optional

Instructions:

  1. Clean pineapple skin, I use a vegetable brush, vinegar and water
  2. Remove the skin and core, place in large pot with water
  3. Peel and grate turmeric and ginger, or slice them very thin, add to the pot
  4. Drop in the rosemary, cayenne pepper and cinnamon sticks
  5. Juice the oranges and lemon, add to the pot
  6. Bring to a boil, let simmer for an hour our longer.
  7. Sieve the large pieces, you can pour juice through a strainer if you don’t want any pulp.
  8. Store in glass jars in the fridge for up to 10 days, or make ice cubes. Enjoy it hot or cold.
  9. You can add the honey or sweetener.

When I make this recipe I add the honey to the pot when simmering, also add grated orange and lemon peel, and put in the whole fruit chopped up. I quite enjoy adding a little cranberry juice when I pour myself a drink.

*If you add a bit of pepper when serving it helps absorb the turmeric, you won’t taste it.
